Lobster Grilled Cheese
Ingredients
- 1 cup cooked lobster meat (claw, knuckle, or tail), chopped
- 1 tablespoon butter (for lobster)
- 1 teaspoon lemon juice
- Pinch of smoked paprika (optional)
- 1 tablespoon fresh chives or parsley, chopped
- 1 tablespoon Kelchner's Yum Yum Sauce
- 4 slices sourdough, brioche, or country white bread
- 1/2 cup shredded mozzarella
- 1/2 cup shredded Gruyère or sharp white cheddar
- 2 tablespoons mayonnaise or softened butter (for toasting bread)
- Optional: Tomato slices or caramelized onion
Directions
1. In a small pan, melt 1 tablespoon butter over medium heat.
2. Add chopped lobster meat, lemon juice, paprika, and Kelchner's Yum Yum Sauce.
3. Warm through (1–2 minutes), then stir in chives or parsley.
4. On each slice of bread, spread mayo or butter on the outside.
5. Layer shredded cheese on the inside of two slices.
6. Spoon warm lobster mixture evenly over the cheese.
7. Top with the remaining bread slices, mayo/butter side out.
8. Heat a skillet or griddle over medium-low heat. Grill sandwiches for 3–4 minutes per side until golden brown and cheese is fully melted. Press lightly with a spatula.
9. Slice in half and serve with Kelchner's Yum Yum Sauce for dipping.
