Are your products Gluten Free?
Most of our products do not contain gluten as an ingredient, however, other ingredients used may contain gluten. The vinegar used in our products is distilled from corn. The Food Starch used in some of our formulations is made from corn. Our Thai Chili Sauce is not gluten free as it contains soy sauce.
Are your products Kosher?
All of our products are Kosher certified through Orthodox Union. Kelchner's also makes prepared horseradish and horseradish with beets Kosher for Passover once a year. For a copy of our Kosher certificate, please contact us.
Do you have a retail store at your location in Dublin, PA?
We moved our operation to Allentown, PA. At this time we do not have a retail store at our location; however, there are many local stores in our area that carry Kelchner products. We would be happy to direct you to the one most convenient for you.
How can I grow my own horseradish?Horseradish is planted in either spring or fall of the year, by using the stock from trimmings of the crop's main root at harvest. For optimal harvest, it is best to allow the root to mature for one entire year.
How long can I use your horseradish products after the expiration?Kelchner products stored under refrigeration will retain their flavor and "heat" for an extended period of time. It is a matter of personal taste. As horseradish ages and is exposed to air, it will in time lose some of its heat.
I can’t find one of your products in my local grocery store. Where can I get it?
Although our products can be found in many major supermarkets, independent seafood shops, gourmet markets, and other specialty stores and farm markets, not all retailers that carry one item carry our entire line. In addition, national chains may not stock our products in all regions of the country. Check the store list for information on grocery stores in your area that may have our products. This jar of your product is hotter or not as hot as others I’ve had. Why does the heat level vary?
We work hard to offer fresh and most simple product formulations as possible. Horseradish, like other crops, is prone to variations due to growing conditions and location. We strive for consistency as much as possible; however, like any seasonal crop you may encounter a batch that is slightly different than others. Most of the time the differences in heat and texture are not noticeable to the average person. We are unique as we grow our own horseradish and routinely evaluate blends from our fields in order to provide the best horseradish possible to our valued customers.
In addition to the characteristic of the root itself, prepared horseradish is also hotter the fresher it is and will lose its heat the longer it sits unused, especially after opened and exposed to air. Elements such as refrigeration and time will impact the heat level which is why we encourage all retailers and consumers to keep our products refrigerated and rotated. A jar that is close to or past its best by date will probably be significantly milder than a jar that has been freshly packaged.
What is the shelf life for your products? What does the “Best By” date mean?
Horseradish products are best when fresh since they will lose a little “heat” every day after we grind it. Kelchner’s Horseradish Products will stay fresh for roughly 5 to 8 months from the time of production (assuming the product has been properly stored in refrigeration). Opened jars will lose their heat and flavor faster and may only keep for 1-2 months in the refrigerator. Kelchner’s Hot Mustard and Tartar Sauce have a one year shelf life from the time of production and don’t require refrigeration. All Kelchner Products should be refrigerated after opening.
Every Kelchner’s product is equipped with a “Best By” date (month/day/year) which indicates the upper limit to when the product should be purchased at your local market. This date helps store personnel rotate Kelchner products to make sure they don’t go out of code.
Tip: Some customers store their horseradish products upside down in the refrigerator after their first use to maintain heat and flavor.
Why does my cocktail sauce sometimes appear to have a gel like consistency?
We periodically see this gelling issue with our cocktail sauce and it usually responds well to a vigorous stir before use. There is a natural reaction that occurs between the fresh horseradish roots and pectin in the tomato ketchup that can sometimes create a gel like consistency. In seeking to remain more “home-style” in nature, we do not add any homogenizing agents so our product does experience some variations in consistency based on ingredient seasonality. Horseradish crops that appear to be quite strong in nature seem to lead to a stiffer cocktail sauce mix as it sets up.
Your label says “Keep Refrigerated.” What happens if it was accidentally left out?
Our products are made fresh and keeping them refrigerated helps preserve the special heat that gives horseradish its zing. Refrigeration also helps the white ground horseradish maintain its color longer. Still, there is no need to dispose of a jar that has not been refrigerated for a short period of time. The refrigeration requirement is to preserve the color and heat and unrefrigerated product should be safe to consume.
