Kale & Apple Salad with Kelchner's Honey Ginger
For the Dressing:
- ¼-½ cup Kelchner's Honey Ginger Marinade and Sauce
- ¼ cup Rice Vinegar
- 1 tbsp Soy Sauce
- 1 ½ tsp Chili Garlic Sauce
- ½ cup Sunflower Oil
- ¼ tsp finely ground Black Pepper
- 6 oz Kale (bag or bunch)
- 2 medium Red Delicious (or your choice) Apples
- 2 tbsp Sesame Seeds
To make the salad dressing, shake together all ingredients in a glass jar.
For the salad, remove any tough pieces from the kale. With a sharp knife, cut kale bunches into very thin strips. Cut the strips again to make small pieces of kale. Place kale in a medium size serving bowl.
Core apples (don't peel) and cut into small pieces. Add apple to bowl with kale.
Drizzle salad with about 1/4 cup of the dressing. Toss to coat everything with the dressing. (add more dressing to taste)
Top salad with sesame seeds. Serve jar of extra dressing at the table. Serves approx. 8 guests.
