Seafood Boil Flatbread Pizza
Ingredients
- 1/2 lb shrimp (peeled, deveined, tail-off)
- 1/2 lb lump crab meat or crawfish tails (drained, if canned)
- 1/2 tsp Cajun seasoning
- 1 tbsp butter
- 1 garlic clove, minced
- Juice of 1/2 lemon
- 2 flatbreads (store-bought or thin pizza crusts)
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup fontina or provolone, shredded
- 1/4 cup Parmesan, grated
- Kelchner's Seafood Boil Marinade and Sauce (to taste)
- 1/4 cup thin-sliced andouille sausage or smoked sausage (optional)
- 1 small corn cob, roasted and kernels sliced off (or 1/2 cup corn kernels)
- 1/4 red onion, thinly sliced
- 1 tbsp chopped fresh parsley
- Lemon wedges for serving
Directions
1. In a skillet, melt 1 tbsp butter. Add garlic and sauté for 30 seconds. Toss in shrimp, crab/crawfish, Cajun seasoning, and lemon juice. Cook shrimp until just pink (2–3 minutes). Remove from heat and set aside.2. Preheat oven to 425°F (220°C). Brush each flatbread generously with Kelchner's Seafood Boil Marinade and Sauce. Sprinkle with mozzarella, fontina, and a bit of Parmesan. Top with the cooked seafood, corn kernels, sausage slices (if using), and red onion.
3. Place flatbread on a baking sheet or pizza stone. Bake for 8–12 minutes, until cheese is melted and bubbly and edges are golden.
4. Drizzle more Kelchner's Seafood Boil Marinade and Sauce over the top. Sprinkle with chopped parsley. Serve hot with lemon wedges.
