Spicy Horseradish Pickles

Ingredients

  • 2 Persian cucumbers (or 1 English cucumber), thinly sliced 
  • 1/2 cup white vinegar 
  • 1/2 cup water 
  • 1½ tbsp sugar 
  • 1 tsp kosher salt 
  • 1½ tbsp Kelchner's Horseradish 
  • 1/2 tsp red pepper flakes 
  • 1 clove garlic, smashed 

Directions

1. In a small saucepan, combine vinegar, water, sugar, salt, garlic, and red pepper flakes. Bring to a simmer to dissolve. 

2. Remove from heat and stir in Kelchner's Horseradish. 

3. Pour over sliced cucumbers in a bowl or jar. Let cool, then chill for at least 20–30 minutes before enjoying. (They get better after an hour!)
